Immune-Boosting Garlic and Ginger Soup
Ingredients:
- 1 tablespoon olive oil or coconut oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon turmeric powder (or 1 tablespoon fresh turmeric, grated)
- 4 cups vegetable or chicken broth
- 2 medium carrots, thinly sliced
- 1 cup chopped kale or spinach
- 1/2 teaspoon sea salt (to taste)
- 1/4 teaspoon black pepper
- Juice of 1 lemon
- Fresh parsley or cilantro for garnish (optional)
Instructions:
- Heat the oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
- Add the garlic and ginger to the pot, stirring frequently for about 1 minute until fragrant.
- Stir in the turmeric and cook for another 30 seconds.
- Pour in the broth and add the sliced carrots. Bring the mixture to a simmer and cook for 10-15 minutes, until the carrots are tender.
- Add the chopped kale or spinach and cook for another 2-3 minutes until the greens are wilted.
- Season with salt and pepper, then stir in the fresh lemon juice for an extra immune-boosting kick.
- Serve warm, garnished with fresh parsley or cilantro, if desired.
