Immune-Boosting Garlic and Ginger Soup

Ingredients:

  • 1 tablespoon olive oil or coconut oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon turmeric powder (or 1 tablespoon fresh turmeric, grated)
  • 4 cups vegetable or chicken broth
  • 2 medium carrots, thinly sliced
  • 1 cup chopped kale or spinach
  • 1/2 teaspoon sea salt (to taste)
  • 1/4 teaspoon black pepper
  • Juice of 1 lemon
  • Fresh parsley or cilantro for garnish (optional)

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
  2. Add the garlic and ginger to the pot, stirring frequently for about 1 minute until fragrant.
  3. Stir in the turmeric and cook for another 30 seconds.
  4. Pour in the broth and add the sliced carrots. Bring the mixture to a simmer and cook for 10-15 minutes, until the carrots are tender.
  5. Add the chopped kale or spinach and cook for another 2-3 minutes until the greens are wilted.
  6. Season with salt and pepper, then stir in the fresh lemon juice for an extra immune-boosting kick.
  7. Serve warm, garnished with fresh parsley or cilantro, if desired.
